Their reasoning was that the customary liège waffle is made from dough that requires yeast and takes several hours to rise. It seems they should make batches of liège dough at the end of each shift and let sit over night to rise then allow the customers to cook a liège waffle as well as making small batches of Brussels waffle (aka Belgian waffle).
